This Pommeau Cask Finish Calvados is made from 100% apples – 30 varieties of bitter and bittersweet apples – that are meticulously sorted and processed by hand. A natural fermentation process lasting a few months precedes distillation in the distillery’s copper column still, which has been in use since 1923. The apple spirit is then aged in French oak barrels, followed by a finish in the domaine’s pommeau cask, which imbues the spirit with a rich texture and soft sweet honey notes.
